Firebirds introduced a taste of Colorado to the Carolinas when it first opened its doors in Charlotte, North Carolina in December of 2000.
The creative concept of owner, Dennis Thompson, Firebirds Colorado lodge atmosphere features architectural designs as grand as the Rockies themselves. The oversized stone fireplace, exposed wooden beams and stacked stone columns make for a cozy, comfortable setting. The southwest inspired decor introduces a contemporary feel. The open air kitchen and smoky aromas from the hardwood flames infuse the restaurant, while the upbeat music pulsing through the room gives off a cool, hip vibe. The sum of all these details makes for one very dynamic dining experience.
Since the inception of the first restaurant in Charlotte, the company has grown to 12 successful units across the country. Sites include:

The combination of bold flavors, sauces and spices creates a unique style of American cuisine that originated in Aspen, Colorado. Thompson, who regularly travels out west, fell in love with the feel of the area as well as the food. “The flavor of our food as well as the experience we provide is authentic,” he says. “All our steaks are well seasoned and cooked over hardwood flames. It’s very unique and I think that’s why when we chose to grow the concept it has been successful,” he says. Specialties include steaks grilled over the open flame, herb roasted prime rib, fresh seafood, hearty pasta, awesome burgers and giant salads.
“It’s the kind of place you can go grab a burger (a really good one), before a movie or make a night of it and enjoy a steak and a great bottle of wine,” Thompson says. "That’s what makes it so appealing."
Firebirds currently has plans to add 2 more locations in 2008 and grow to over 20 units in the next 3 years.
