Firebirds Rocky Mountain Grill, a Colorado themed restaurant based out of Charlotte, NC opened its third location on September 4th, 2003 at Short Pump Town Center in Richmond, Virginia. With two established restaurants in the Carolinas, the Richmond locale coincided its opening with that of the mall. The upscale retail mall occupies 1.2 million square feet just outside of the citys capital. An exclusive shopping destination, filling the niche for premier fashion, lifestyle and retail in the region, Short Pump Town Center lays claim to the regions only Nordstrom and Lord & Taylor. The open-air two level mall hosts over 100 specialty shops as well as flagship stores such as Dillards, Hechts and Dicks Sporting Goods. Situated beside one of the largest Dicks Sporting retail stores in the nation, and behind the Funny Bones Comedy Club & Cafe, Firebirds Rocky Mountain Grill encompasses 7,200 square feet and seats about 225 people. Incorporating the flavor of bold sauces, Chipotle peppers and Ancho chiles, Firebirds proudly features the unique taste of Colorado and the Rocky Mountains. The open-air kitchen, complete with wood-burning grills, wood-fired pizza ovens and rotisseries, features cooking derived from the Rockies and Southwest. Highlights include aged, hand-cut steaks, prime rib, fresh seafood, rotisserie chicken, homemade pizza, pasta, sandwiches and salads. Reminiscent of a Colorado lodge, with high vaulted ceilings, exposed beams and stone fireplace, the atmosphere at Firebirds is every bit as inviting as the food. In addition
to the three existing Firebirds (Charlotte, NC and Durham, NC), and the
recent Richmond locale, construction is underway in Phoenix, AZ; Memphis,
TN; and Tucson, AZ. The company also has signed locations in Raleigh,
NC and Phoenix, AZ. Two additional sites under negotiation include another
